CHRISTMAS FRUITCAKE
This recipe has been my mother's side of the family for generations. It's so special to me. Every year at Christmas time I end up baking 3 of them. I usually cut a fruitcake up into 4 sections and giving them away as gifts. You will never find another fruitcake that can even come close to this one. Why? It is made with soooooo__ much love! I pray that it blesses you. (Not to mention that this really is the best one I have ever eaten. If you have a good one too please share it with me. I am one person who really loves fruit cake!) 1 lb. of Whole Pecans
Mix these ingredients and place into a large bowl. Sprinkle 1 cup of Flour, 1 tsp. of Baking Powder, 1/4 tsp. of Salt. With your fingers, gently mix into the fruit and nuts. Set this mixture aside! The trick to this fruitcake is doing this step first ahead of the wet ingredients. 2 Medium Eggs
Beat these ingredients into the mixture above and pack down into a greased and floured, angel cake tube pan. Bake 275* for about 1 1/4-1 1/2 hours or until dry on top. You don't want to brown the top too much or this cake will not work out right. I let it cool and cut it into 4 large pieces and wrap each tasty cake inside of foil. Freezes wonderfully! Now the trick is to keep everyone including myself from eating it before Christmas. I usually have to make three of these because everyone wants some along with all of the various cookies and candies I make. Great for gift giving! Just thinking of a slice of this fruitcake makes me hungry for some. Oh, I can hardly wait for Christmas!
